Spicy Potato Corn Chowder   Leave a comment

I will grab a picture tomorrow, as I’m sure someone will have leftovers.

  • 1/2 cup minced celery
  • 1/2 cup minced carrot
  • Minced garlic to taste
  • 4 cups vegetable broth
  • 5-6 chopped potatoes
  • 2 cans creamed corn
  • 1 can evaporated skim milk
  • 1 can chopped green chilis
  • half and half to taste
  • 8 oz pepper jack cheese, grated
  • Cumin
  • Salt
  • Pepper

Saute the garlic, celery and carrot until slightly softened.  Add broth, potatoes, corn and chilis and simmer until the potatoes are soft.  Add cumin, salt and pepper as desired. Add in evaporated milk and cheese and cook on low until the cheese is melted. Stir in half-and-half or heavy cream to taste.
